2 kilograms Whole salmon |
|
115 grams Butter, melted |
|
1 teaspoon Caraway seeds |
|
3 tablespoon Lemon juice |
|
Salt and freshly ground pepper |

Sprigs of flat parlsey and lemon wedges, to garnish |
* Preheat the oven to 180.C/ 350.F/ Gas 4. Using a sharp knife, cut the fish in half lengthways.
* Place the salmon, skin in side down, in a lightly greased roasting tin and brush with the melted butter. Season, sprinkle over the caraway seeds and then the lemon juice.
* Bake the salmon in the oven, loosely covered with foil, for 25 minutes or until the flesh flakes easily.
* Transfer the fish to a serving plate. garnish with flat leaf parsley and lemon wedges. Serve hot or cold. |

- Take care when cutting the fish dip your fingers into a little salt to help you to grip the fish better. | |
